Maple Mayhem – Irish Whiskey – Maple Bourbon Cask 43% A maniacal expression of Irish Whiskey aged in maple bourbon casks to give a sweet kiss of maple and vanilla. So pucker up, close your eyes and lean in for a sip. Non chill filtered and bottled at 43% 

ABV: 43%  VOL: 700ml

Nose : A sweet introduction as warm sugar notes with hints of smoke, vanilla, maple caramel and baked prunes demand your attention.

Palate: A smooth oily mouthfeel coats the cheeks as flavours of Maple coated nuts, cinnamon pancakes and spice develop further.

Finish: A medium finish as maple, oaky wood and smoke lingers

Sam & MaudeSam and Maudeline Black are a husband and wife team who started their brewing company Blacks Brewery in 2013. This venture/obsession first began many years ago when Maudeline gave Sam a beer making kit for Valentines Day. What started as a hobby quickly developed into an obsession and thus through Sam’s passion and enthusiasm Blacks Brewery became reality.  In 2015 they added the Distillery and are Ireland’s first co-located micro brewery and Distillery producing a range of boutique spirits.

In 2020, they invested further in the distillery and whiskey, with the purchase of two copper pot stills. Their shiny copper pot stills, Bonny and Morrigan, travelled over 2000km from Italy to take pride of place in Kinsale. They were crafted by experts Frilli Impianti, who have a long standing heritage of producing the finest stills.

Bonny, the larger of our two stills, has a capacity of 2800L and Morrigan a capacity of 1600L. Currently in the brewhouse we carry out a daily double shift brew to create a wash of 8% ABV for the distillation process. Once the wash has been created in our brewery It is then back over to the distillery for Bonny and Morrigan to do their job, which at the moment results in 21 bourbon sized barrels (225L) per week of whiskey being filled out of the distillery.
